Step 2 and Step 4 versions (video links for both are below):

Step 2 Low-cal

3.5 oz  boneless, skinless chicken breast cut into 1” chunks

3.5 oz  zucchini  (sliced into ½” thick pieces) OR cherry tomatoes

Marinade:

1/2 C   chicken broth

1 T) apple cider vinegar

1 tsp  Stacey Hawkins Mediterranean seasoning

 

  1. Add chicken and veggies to a zipper bag.
  2. Combine marinade ingredients in a bowl, whisk together then pour over chicken & veggies. Set in the fridge to marinate for 1 hour, up to overnight.
  3. When ready to cook, thread chicken & veggies on to a skewer.
  4. Grill over medium heat for 10 -12 minutes, turning occasionally. Verify with a meat thermometer.
  5. Serve hot!

 

Step 4 TRANSITION: 

Combine vegetables and add 1 tsp Stacey Hawkins Roasted Garlic Oil to the marinade.
